NEW Recipe Plus Your Weekly Meal Ideas
Hi, Elizabeth here. What are your plans for the weekend? I’m looking forward to cooking the radishes, kale, rainbow chard, and broccolini friends gave me this week! I’m planning to make a swish chard quiche this evening. It’s unlikely my 17-year-old will eat it, since she doesn’t usually eat eggs. So, I’ll reheat some leftover chicken from last night to serve with dinner. She can help herself to either or maybe even both. You never know!
New recipe
Anna’s sharing her go-to salmon recipe this week: Orange Ginger Salmon. It’s a big hit at her house. Two of her kids like it so much that they cheer when they hear what’s on the menu! DINNER:
Lemon Spatchcock Chicken (Trader Joe’s), roasted potatoes, green beans
BBQ Chicken, roasted broccoli, sweet potatoes
Make-your-own BBQ Chicken Southwest Salad (chicken leftover from the previous night), toasted sourdough bread
Easy Black Beans and Rice, avocados, shredded cheese, tortilla chips, salsa
LUNCH
Leftover Southwest BBQ Chicken, Southwest Salad, sliced apples, tortilla chips
Sunbutter and jelly sandwich, chips, carrots/mini cucumbers/dressing, grapes, chocolate chips
Cheese, crackers, hummus/carrots/pita chips, orange slices, cookies
BREAKFAST
Oatmeal, chopped almonds, craisins
Toast topped with sunflower seed butter and honey, banana
Smoothie made with fruit, Greek yogurt, English muffin
Cereal, milk, fruit
