What are your plans for the Memorial Day weekend? I was all set for a quick trip to visit friends and family, but a pesky cold changed all that. But, the upside is, I’m currently sitting on my screened-in porch typing this and enjoying the sunshine and cool temps here in the DC area.

I often think of how many years it was before one of my daughters tried baked beans. She was 12 or 13. That’s a lot of years. But don’t let that discourage you! I share this to say that I can relate to your frustrations. Hang in there and remember to take time to think about what you need for mealtimes to feel less stressful. What I’m Cooking/Meal Ideas
DINNERS
Zucchini Fritters, roast chicken, green beans - (Make a double batch and serve the zucchini fritters room temp in a packed lunch or reheated if you’re having them at home).
Black bean zucchini quesadillas (recipe coming), chips and guacamole, watermelon - (Make extra of the quesadillas and serve them reheated or room temp if sending to school for lunch).
Grilled sausages, leftover baked beans, Spring Asparagus Salad - (I’ll be eating leftovers of this salad, topped with a couple of leftover, reheated zucchini fritters).
Snack dinner (cheese, meats, crackers, sliced baguette, strawberries, carrots, pickled green beans) - Who doesn’t love snack dinner?!
LUNCHES
Leftover zucchini fritters with tzatziki, salami, baguette slices, Greek yogurt, berries, cookies
Leftover baked beans, cheese and crackers, carrots and hummus, chips
Apple slices and nut or seed butter, Greek Yogurt, Nature’s Bakery Fig bar, pretzels
Nutella (or chocolate SunButter) sandwich, strawberries, Greek yogurt, raw sugar snap peas with dip
BREAKFAST
Toaster waffles with butter and syrup, veggie breakfast sausage, and banana
Toaster hash browns, egg bites (from Costco), strawberries
Baked mixed berry oatmeal - bake ahead of time and reheat in the microwave
